
This month’s Tried and Tasted event is being hosted by Kits Chow and features recipes from Hooked on Heat. I wasn’t familiar with Hooked on Heat and was delighted to discover that Meena’s blog is dedicated to the basics of Indian cooking. I started teaching myself to cook Indian food about a year and a half ago, and I’ve made some headway, but it is so different from the food that I grew up with that’s it been slow going. Hooked on Heat has a lot to offer the novice cook of Indian food, such as Indian Cooking 101, in addition to some amazing-looking recipes and photographs.
Baingan Bharta is one of those dishes that I’ve loved in restaurants, but my attempts at home have been less than outstanding. “Meh” is more like it. The recipe for Baingan ka Bharta from Hooked on Heat, however, has a couple of extras going for it. First, the eggplant is roasted, not just sautéed. Also, Meena got the recipe from her mom. This time, my eggplant was spectacular. Go, Meena’s mom!
She suggests serving this with rotis, but I had some Mushroom Biryani in the freezer, so I reheated that to go with. It survived the freezer nicely.
