Pineapple Salsa

Beautiful pineapples from Costa Rica are in season and have been on sale at the grocery store this month.  I love pineapple plain, but when I have this much available, I want to use it in as many recipes as I can. We had this with some veggie fish tacos.

Pineapple  Salsa

This is also good with cilantro in it or made with mango in place of the pinepple.

1 cup pineapple, diced small
2 jalapenos, minced, about 3 tablespoons
1 slice red onion, minced, about 3 tablespoons
juice of 1 lime
pinch of salt

Combine all ingredients and set aside in the refrigerator for at least an hour to let flavors mingle.

Makes about 1 cup for 3 servings.

  1. Oh, I made something almost exactly like this yesterday, but with an ataulfo mango instead of the pineapple. Heaven! I love fruity-spicy salsas. I haven't noticed pineapples on sale in my area (Saskatchewan) but I'll look harder next time I shop. :)
